Creamy Kale & White Bean Stew
A thick, comforting pot of white beans simmered with onion, carrot, garlic and cumin, made creamy simply by mashing some of the beans — no cream needed. The kale goes in for the last few minutes so it stays tender and deep green, and a squeeze of lemon brightens every spoonful.

Method
Step 1
Rinse the kale under cool running water, rubbing the leaves gently, then drain. Strip the leaves from the stems. Finely chop the stems and keep them separate; tear or chop the leaves into 2–3 cm pieces.
Step 2
Heat the oil in the pot over medium heat. Add the onion, carrot and chopped kale stems with a pinch of salt and cook, stirring often, for 8–10 minutes, until soft and the onion is translucent and just turning golden.
Step 3
Add the garlic, cumin and chili flakes and stir for 1 minute until fragrant, without letting the garlic brown. Stir in the tomato paste and cook for 1 minute more, until it darkens slightly.
Step 4
Add the beans, hot water and bay leaf. Bring to the boil, then lower the heat and simmer gently, partly covered, for 15 minutes, stirring now and then.
Step 5
Remove the bay leaf. Scoop out about a third of the beans with a little liquid, mash them to a smooth paste with a fork or potato masher (or blend them), and stir them back into the pot. The stew will thicken to a creamy consistency; if it seems too thick, add a splash of hot water.
Tip: You can also mash some beans directly in the pot with a potato masher — just leave plenty whole for texture.
Step 6
Stir in the kale leaves and simmer, uncovered, for 5–8 minutes, until tender and deep green.
Step 7
Take the pot off the heat, stir in the lemon juice and season well with salt and pepper. Taste: canned beans and water need a fair amount of salt.
Step 8
Ladle into warm bowls and finish each one with a drizzle of olive oil.
Substitutions
- Use vegetable stock instead of water for a deeper flavor — check the label, as many stock cubes contain celery and some contain gluten.
- Use 250 g of dried white beans instead of canned: soak them overnight, drain, boil in fresh water for 10 minutes, then simmer until completely tender (about 1 hour) before starting the recipe.
- Chickpeas work in place of the white beans.
- Add a diced potato with the carrot for an even heartier stew; simmer until tender before mashing.
Serving suggestions
- With warm crusty bread or toasted Arabic bread for dipping.
- Spooned over cooked rice or bulgur.
- Topped with a spoonful of yogurt or crumbled feta (this adds milk).
Cooking tips
- Don’t add the kale too early — after about 8 minutes it starts to lose its color and fresh flavor.
- The finely chopped stems cook with the onion from the start, so nothing from the bag goes to waste.
- Season at the end, as canned beans vary in saltiness.
Storage & leftovers
Cool the stew and refrigerate it in covered containers within 2 hours (1 hour if your kitchen is above 32 °C), then eat within 3–4 days. It thickens in the fridge: reheat with a splash of water, stirring, until steaming hot throughout. The cooked stew can also be frozen in portions; thaw it in the fridge before reheating.
